Dear Guests,
my name is Tomáš Černý, and Dejvická 34 is a very personal endeavor for me. I have been involved in its creation from the very beginning — from the first idea to the restaurant’s everyday operation. I took part in shaping the concept, the cuisine, and the overall atmosphere. That is why I do not see myself only as the Head Chef, but as part of the whole.
I wanted to cook from an early age. I trained as a chef at the Ambassador Hotel in Prague and was fortunate to be guided by people who helped me grow both professionally and personally. They taught me respect for the craft and a sense of responsibility toward ingredients, the team, and our guests. I was strongly influenced by figures such as Vito Mollica, then Head Chef of the Four Seasons Hotel Prague, and restaurateur Riccardo Lucque, who entrusted me with leading the kitchen at La Finestra in Cucina, which went on to become a widely respected and highly regarded restaurant.
I also gained experience abroad through stages and culinary training in Italy and Austria. Italian gastronomy, seasonal produce, and a focus on flavor and simplicity form the foundation of the cuisine we serve today at Dejvická 34 as an Italian restaurant in Prague. Equally important to me are long-term professional relationships that have naturally grown into friendships. Working alongside chefs who rank among the leading figures of European and international gastronomy keeps me sharp and reminds me that learning in this profession never truly ends.
I believe that food brings people together. In difficult moments, it can offer comfort; in good ones, it adds another pleasant dimension to shared experiences. I love people and I love food — and for this reason, I place the highest importance on the quality of ingredients, without ever compromising. Each course is, to me, a gesture of respect toward our guests and the work of the entire team.
I am deeply grateful for the international recognition that Dejvická 34 has received in a very short time. I see it as an acknowledgment of the team’s hard work and of the trust our guests place in us. Thanks to them, Dejvická 34 has become one of the well-regarded restaurants in Prague.
At Dejvická 34, we will often meet. I am not only in the kitchen — I am naturally drawn to being among our guests. I enjoy being present and taking in the atmosphere of the restaurant.
